Broiled Butterfly Parmesan Shrimp

The New Year is upon us and what better way to start the New Year or say good-bye to the old than this delicious Broiled Butterfly Parmesan Shrimp recipe!  This recipe is great as an appetizer or as a main dish.  By the way, HAPPY NEW YEAR!  

Preparing the Shrimp

Prepping the shrimp requires cleaning, de-veining, shelling, removing the head,  legs, and then butterflying.  Whew, that sounds like a lot of work!  It isn’t and only requires a bit of prep time.  We have a helpful Culinary Tip post about shrimp, here.  I also found a brief YouTube video, here.  

Seasoning

We keep our seasonings simple feeling it enhances the flavor perfectly.  As we clean and prep the shrimp they are added to a medium mixing bowl where we then add, fresh lemon juice, salt, pepper, and red pepper flakes.  But, you could easily add fresh parsley, thyme, basil, oregano, and garlic.  Like I always say, make our recipe your own by adding seasonings you favor.

Butter and Cheese

Place each individual shrimp into a large baking dish, in a single layer.  Remember to open into a butterfly.  

Next, pour the melted butter over each butterflied shrimp allowing it to surround the shrimp, and then spoon on the grated parmesan cheese.  I will often use a measuring spoon for this.  Sometimes, I will center the cheese onto the shrimp and other times I’ll spread it evenly over the opened butterflied shrimp.   

That’s it!  Super easy and doesn’t require much time, either.

Into The Oven

I always preheat my oven to at least 400 degrees and will move the setting to broil just before placing the baking dish into the oven.  This cooks up fast, and in about 5-7 minutes.  You’ll notice the shrimp will become more of an opaque white with touches of peachy-pink around the edges, and the grated parmesan cheese will toast to a golden color.  Do not overcook this.  

Overcooking can make or break this recipe.  When prepared properly, the shrimp is cooked but, tender with delicious flavor.  

Ready...Enjoy

We love this toasty out of the oven and with no added flavors.  Such as dipping sauces.  We usually pair this with our Buttery Garlic Angel Hair Pasta and Riced or Shredded Zucchini recipes.  These recipes combine beautifully and the flavors are well, delicious together!

Broiled Butterfly Parmesan Shrimp

Equipment

  • Baking dish, oven

Ingredients

  • 1 lb Shrimp, cleaned, shell removed, and butterflied frozen, 15-18 per pound, large size, de-viened
  • 1/2 cup Butter, melted
  • 1 cup Grated Parmesan cheese Approximately 1 Tbsp per shrimp
  • Juice from 1/2 of a lemon
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Red Pepper Flakes

Instructions

  • Defrost the shrimp. We defrost ours by placing the bag into the refrigerator for a slow defrost, and usually the night before we plan to prepare them.
  • Rinse and clean shrimp by removing shell, legs, & tail, if desired.
  • Butterfly shrimp. Remove inner vein, if desired.
  • Place the shrimp into a medium-sized mixing bowl. Add freshly squeezed lemon juice, salt, pepper, and red pepper flakes. Mix to combine.
  • Place butterflied shrimp in a single layer on your 9 x 13-inch baking dish or larger, if needed,
  • Pour melted butter evenly over shrimp.
  • Spoon approximately 1 Tbsp of the grated parmesan cheese onto each opened, butterflied shrimp.
  • Broil in your oven for 5-7 minutes or until done. Shrimp will become white with areas of soft peachy-pink, and the cheese will become lightly golden when done.
  • Remove from oven broiler and serve immediately.
