Strawberry Pizza is a delicious dessert

Strawberry and cheesecake lovers will delight in this light and refreshing fruity dessert.  I love when strawberry season rolls around and I can use them to make Strawberry Pizza, is a delicious dessert.  

Sweet Spring

Strawberries are in season beginning in early to mid April.  Just as the warmth of Springtime delights us with delicate and colorful blossoms. It also ripens and sweetens strawberries.  Strawberries begin rapidly growing in spring, summer and at times, through to early fall.  

Delicious Little Red Berries

Once their season begins these little red berries are harvested by hand nearly every day.  They must remain on the plant to ripen, as they do not continue to ripen once picked.  So, if you grow them or purchase them from your favorite fruit stand remember red is ripe.  Berries with white tips or ends will never ripen in their basket or on your countertop.

These strawberries are not only delicious in this Strawberry Pizza recipe, they can be enjoyed freshly picked, in our Strawberry Chicken Salad, jams, dried, and can be frozen.  My mouth waters as I think of Strawberry pie, ice cream, Strawberry Shortcake and Italian Strawberry Gelato.  Yummy Goodness!!

Let's Get Started

There are three parts to this tasty and E-Z dessert.  While, really four if you count rinsing or cleaning these red beauties.  Over the years, I’ve found it best not to wash strawberries until I’m ready to use or consume them.  I will transfer them from the basket to a bowl and then into the refrigerator they go.   

It's Bath Time

Lol, Bath Time!  But seriously, I’ll fill my clean sink or large bowl with clear cool water, add in white vinegar and then the strawberries.  Using my hand I’ll gently swirl the water and berries to loosen any grime, dirt, or impurities.  Allow the berries to rest for 5 or more minutes as white vinegar kills off any bacteria.

When I’ve purchased a full flat or 1/2 flat of strawberries I always fill my sink with cool water and will add up to 1 cup of White Vinegar.  If I’m cleaning one or two baskets of berries, I fill a large mixing bowl with water adding in 2 tablespoons of white vinegar, and then the berries.  

Place a large towel on your countertop, rinse them, transfer your clean strawberries from the water to the towel, and allow to air dry.  For me a single layer with space between berries works best.  

This is when I use my handy little strawberry huller to remove the core, green top and stem.  If you don’t have a huller a paring knife or plastic straw works, too.  Next, slice them and store them until we’re ready to use them.

This is what my little strawberry huller looks like.  I’ve seen different products designs but, this is the one I’ve used for years.  

Pizza Crust

This crust is similar to a crumble crust and not a traditional pie crust.  The ingredients are flour, room temperature butter, chopped nuts and powdered sugar.  

In a medium bowl I combine the flour, chopped nuts, powdered sugar, and will use a whisk to combine the ingredients.  Next I add in the butter and with clean hands I pinch the butter and dry ingredients together.  I continue this until it has a crumbly appearance.  

Pour and Press

I like to use a round pizza pan when making my Strawberry Pizza.  But really, you could use a pie plate, pyrex baking dish, or other container of your choosing.  

Empty the pie crust onto your pizza pan.  Using your hands spread the loose crust out evenly while working it to the very edge of your pizza tray.  Using your fingers press and pat the loosen mixture until it creates the crust.  

Bake in your 400 degree preheated oven for 12-15 minutes until it is a light golden tone.  Don’t over bake crust as it will become tough.

Filling

This is a three ingredient pie filling; cream cheese, sugar and 1 beaten egg.  I love how easy this filling is to make.  Just blend ingredients until well combined.

Once your crust has cooled, gently spread over crust and bake in a 200 degree oven for 10 minutes. 

Topping

This topping is made with water, sugar, cornstarch/water mixture and strawberry jello.

Bring your water to a boil and add in your sugar.  Reduce heat and stir until the sugar has dissolved.

Using a small mason jar add in water and cornstarch.  Seal, shake to mix, until cornstarch is dissolved.  Once dissolved slowly add it to the water and dissolved sugar mixture.  This will immediately start thicken, continue stirring until mixture is clear, remove from heat and stir in strawberry jello.  Set aside to cool.  

Strawberries

At this point, I start arranging my strawberries on my pizza pan and on top of the filling. I’ve already sliced them and placed them into a mixing bowl. 

I like to start arranging them from the outer edges, circling around to the center.  Using the largest slices towards the outside and gradually reduce the slice size as I move towards the center.  

I’ve seen different versions of this recipe many times and everyone has their own preference on how to add in the strawberries.  Some chop them into bite size pieces, then add them to the topping mixture.  Other’s like me, artfully arrange them.  It’s completely up to you.  

Pour on the Topping and Chill

Begin spooning on your topping.  The topping will begin spreading as you work your way around the pizza.  After you’ve spread the topping over your strawberries use a large spoon to evenly distribute the topping.  Now all that is left is to place it into your refrigerator to chill.  In a few hours, you’ll be enjoying your delicious Strawberry Pizza.

Final Thoughts

This is one of our favorite dessert recipes and one that’s made every year when the first strawberries ripen.  Mother’s Day, Father’s Day and 4th of July often include this recipe. Our boy will often put in a request for this dessert.

Sitting outside with our family, hearing their voices joined in conversation, watching the sun set, feeling a cool evening breeze and eating Strawberry Pizza are treasured moments and memories.

Strawberry Pizza Recipe

Strawberry Pizza

Ingredients

  • 1 cup flour
  • 1/2 cup butter softened room temperature
  • 1/4 cup nuts finely chopped
  • 1/4 cup powdered sugar
  • 6 oz Cream Cheese
  • 1/4 cup sugar
  • 1 egg beatened
  • 1 cup water
  • 1 cup sugar
  • 3 tbsps Corn starch and Water mix together in small mason jar
  • 3 tbsp strawberry jello

Instructions

Pie Crust

  • Mix together flour, chopped nuts and powdered sugar. Stir to combine.
  • Add butter. Using a pastry cutter or your hands mix in butter.
  • In a pre-heated 400 degree oven, bake the crust for 12-15 minutes or until lightly golden in color. Do not over cook.

Filling

  • Blend together cream cheese, sugar and one beaten egg.
  • Pour onto crust and bake for 10 minutes at 250 degrees.

Topping

  • Bring 1 cup water to boil and add in 1 cup sugar. Stir until sugar is dissolved and water is clear.
  • In a small mason jar add 3 tbsp water and 3 tbsp cornstarch. Shake to mix and until all cornstarch lumps are dissolved. Add to sugar water and stir to thicken and clear. Remove from heat.
  • Stir in Jello and then set aside to cool.
  • Arrange strawberries on pizza.
  • Once topping is cool, pour spoonfuls over arranged strawberries. Using the back of a large spoon spread evenly over strawberries.
  • Place in refrigerator to chill.
  • Serve and enjoy!
