Smoked Salmon Cucumber Appetizers

I love appetizers and these Smoked Salmon Cucumber Appetizers are a refreshing and healthier alternative.  These are made with a handful of ingredients and ready in 20 minutes.  

Ingredients

To make these refreshing appetizers you’ll need:

  • Cream cheese
  • Lemon
  • Capers
  • Fresh dill
  • Seedless or burpless English cucumbers
  • Smoked Salmon
  • Salt and Pepper to taste

Let's make these colorful & Beautiful Appetizers

Always rinse and allow your fresh ingredients to dry.   Set your cream cheese out to soften.  Once softened, place it into a large mixing bowl.  I like to cream the cream cheese using a fork or spoon.  Then I’ll add in and mix together the lemon zest, lemon juice, capers, dill, and a dash of salt and pepper.  Set aside for now.

Let's Talk Cucumbers.

I like to purchase “Long” or “Long English Cucumbers”.  For the most part, this variety is almost seedless or burpless.  They are mostly grown in hothouses, are longer, with smooth thin skin, and have a mild flavor.  All characteristics that make this appetizer delicious and very pretty.

Slicing Options

As I see it, there are three options.  A long sharp knife, a wide peeler, or a mandolin.  Any option will work.  But, I’ve found the standard peeler cuts slices that are way too thin, and why I recommend a wide “Y” peeler.   

When I’ve used a “Y” peeler, I remove both ends and then slice lengthwise into the cucumber with a knife removing a portion that’s too small to roll.  This creates a flat and more stable surface to lay the cucumber down onto your work surface.  Then it’s a matter of pulling the “Y” peeler towards you through the cucumber to create your thin slices.  As you slice you may run into seeds.  If so, turn the cucumber and begin slicing from the opposite side. 

Lay your slices side by side onto some paper towels, this will absorb some of its juices.  Be sure to pat dry each slice prior to rolling.

Time To Roll

This is when I season the cucumber with salt and pepper. Then spread the filling onto each piece of sliced cucumber.  Top with a few thin slices of smoked salmon, a tiny sprig of dill, and gently roll.  Secure with a toothpick, if needed.

Can you make these ahead of time?

These are best served immediately.  You can make the filling ahead of time.  Be sure to store it in your refrigerator.  Once you slice into a cucumber it begins releasing its juices and you don’t want soggy appetizers.

Can I use Different Salmon?

In my opinion, no.  You know we are all about making our recipes your own by substituting or adding ingredients.  But, I feel the smoked salmon is best.  Other varieties, like Lox or cold-cured Salmon, just don’t have the same flavor.

Smoked Salmon Cucumber Roll Appetizer

Ingredients

  • 8 oz Cream cheese, softened
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 tbsp capers, drained
  • 3 tbsp fresh dill, chopped
  • 1 large seedless cucumber
  • 2 oz Smoked salmon
  • Salt and Pepper, to taste

Instructions

  • Rinse and dry cucumber and set aside.
  • In a large bowl, combine the cream cheese with the lemon zest, lemon juice, capers, and fresh dill. Season with salt and black pepper, to taste, and stir to combine. Set aside.
  • Remove the ends from the cucumber and thinly slice lengthwise. Use a sharp knife, a wide vegetable peeler, or a mandoline slicer. Remove cucumber slices that are too small.
    Note: Cucumbers release their juices once cut. Use paper towels to pat dry each cucumber slice before adding cream cheese filling and smoked salmon.
  • Spread one to two teaspoons of the cream cheese mixture along the length of each cucumber slice, adding a bit at the far end to help secure one rolled.
    Optional methods: 1) Place cream cheese filling mixture into a zip lock baggy, snip a 1/4" from one end of the bag, and squeeze filling onto the cucumber slices. 2) Spoon cream cheese filling into a plastic pastry bag, trim 1/4" from its tip and squeeze onto the cucumber slices.
  • Top with small pieces of smoked salmon and tightly roll the cucumber into a rollup. If needed, use a toothpick to hold each appetizer together.
  • Repeat with the remaining slices and filling.
  • Serve immediately and enjoy.
