Shrimp Scampi and Veggies Over Pasta

Quick and Easy Shrimp Scampi Over Pasta

One of our go-to fresh and easy meals is shrimp scampi and veggies over pasta.  It preps and prepares quickly and is relatively light eating.  

This is a basic recipe that you can add other ingredients to or not depending on how you’re feeling at the moment.  We have some Culinary Tips for preparing pasta here.

What is Shrimp Scampi

Shrimp scampi originated in Italy and is larger sized shrimp that is made with creamy butter, olive oil, garlic, and wine sauce over a  bed of pasta.  Angel hair pasta works great and prepares quickly.  Our basic recipe doesn’t include wine, however, you can certainly add chicken broth or a little splash of good white wine.

To devein or Not to Devein

Shrimp has a ribbon like digestive tract running along its top that containing food sources previously eaten by the shrimp and often there are sandy particles.  So, you absolutely want to devein shrimp.  

Additions and Substitutions

Our basic recipe we use butter to saute the red onions, garlic and shrimp.  To this you can swamp the red onion with a scallion or two, and you can add a splash of good white wine, chicken or vegetable stock.  Red pepper flakes are a great addition to the seasonings.

Which Veggies work well as a Side Dish

Before I get to side dishes let me say that zucchini, sliced into wedges and then cut into 1/2 -1 inch pieces are great sauteed with the onions, garlic and shrimp.  To quicken cook time microwave them slightly before adding to your saute pan.  

For side dishes I’ve found sauteed or roasted asparagus or even freshly snapped green beans are a great addition.

Why Do Shrimp Shrink & How Long do I Saute Shrimp

Shrimp do shrink as they cook.  This is due to their high water content.  So, a pound of shrimp may shrink down to 3/4 of a pound when cooked.  

Sauteed shrimp cooks in minutes, literally!  They should curve slightly many make reference to a opened “C” shape and have areas of a soft pink or salmon color.

Shrimp Scampi and Veggies over Spaghetti

Ingredients

  • 1 16 oz Box of Spaghetti
  • 2 Tbls Unsalted Butter
  • 1/2 large Red Onion, Diced
  • 3-4 cloves Garlic, minced
  • 1/2 tsp ground cumin, divided
  • Sea Salt and Black Pepper, to taste
  • 1 1/4 lbs Large Shrimp, peeled and deveined
  • 3 Tbls Fresh Parsley, chopped
  • 2 large Lemons cut into wedges, divided

Instructions

  • Heat a large pot of water over medium-high heat. When water is boiling, add salt and allow it to dissolve. Add spaghetti and cook according to package instructions.
  • While the spaghetti is cooking, add butter to a large skillet set over medium heat. Add red onion and ground cumin. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring occasionally, until the onion softens and begins to develop some color, approximately 6-7 minutes.
  • Add the shrimp and garlic to the skillet and cook, stirring frequently, until the shrimp changes color and starts to curl slightly, approximately 2-3 minutes. Do not overcook.
  • Remove skillet from heat and add the chopped parsley and a couple squeezes of fresh lemon juice. Season with additional salt and pepper, if desired, and stir to combine. Set aside.
  • When spaghetti is ready, remove from heat and pour into a colander. Drizzle with olive oil and toss to coat, this will help keep the pasta from sticking. Transfer pasta to a warmed serving platter. Top spaghetti with the cooked shrimp mixture and serve immediately with the remaining lemon wedges and some freshly grated Parmesan cheese, if desired. Enjoy!
